I call myself an experimental baker – I like to use basic recipes and embellish them with different fruit, spices and flavours, or try to recreate tasty treats I’ve tried elsewhere.

My two greatest baking influences are Delia (of course), who taught me the basic all-in-one victoria sponge, and my gran, who always has homemade cake or biscuits available at a moment’s notice and whose mantra is “one mustn’t be caught without a cake”. Inspirational.
